Corn-Sausage Chowder{Dukes and Duchesses}


Hi!  I’m Randi from Dukes and Duchesses and I always love sharing at The CSI Project.
I love comfort food.  The cold days of winter just make me want to put a pot of soup on the stove, break out the bread machine, and huddle up with the family.  You too?
This recipe for Corn-Sausage Chowder is delicious.  And easily thrown together at the end of the day.  If your house is as busy as ours, those are magical words.  Let me tell you how to make this yummy soup.
Gather your ingredients.  One pound of pork sausage, 1 cup coarsely chopped onion, 3 cups 1/2-inch pieces red potatoes, 2 cups water, 1 teaspoon salt, 1/2 teaspoon dried oregano, 1/8 teaspoon black pepper, one 15 1/4-ounce can whole-kernel corn {drained}, one 14 3/4-ounce can creamed corn, one 12-ounce can evaporated milk {I always use fat free}.
 

In a large pot, cook the pork sausage and onion until the sausage is brown and the onion is tender.  Drain well or later you’ll have a layer of grease floating on top of your soup.  A little bit nasty.
 

Stir in the potatoes, water, salt, oregano, and pepper.  Bring to a boil, reduce the heat and simmer, covered, for about ten minutes or until the potato pieces are tender.
 

Stir in both cans of corn and the evaporated milk.  Cook and stir until heated through.
That’s it!  Serve with a loaf of homemade bread or a store-bought baguette.  See?  I told you it was easy.
