Two of my favorite comfort foods are broccoli cheese soup and macaroni and cheese. I mean, really, how perfect are they? But how much better could they be if you combined them? And this recipe is the result of that question.
Cheddar Broccoli Mac & Cheese
Ingredients:
2 cups broccoli florets, chopped
16 ounces rotini pasta
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 cup plus 1/4 cup grated sharp cheddar cheese, separated
1/4 teaspoon each, onion powder and garlic powder
1/4 cup panko
First, cook broccoli in a large pot of boiling, salted water until crisp-tender, about 3 minutes.
Using a slotted spoon, scoop broccoli into colander and run cold water over it. Add pasta to the same water and cook until al dente.
Meanwhile, melt the butter in a medium saucepan over medium heat. Whisk in flour and cook for two minutes.
Slowly whisk in milk and heat until thickened, about 10 minutes. Preheat broiler.
Add in 1 cup cheese. Stir until melted. Add onion and garlic powders, as well as salt and pepper to taste.
Mix the broccoli, pasta, and cheese sauce together. Pour into 12″x9″ baking dish.
Sprinkle 1/4 cup cheese and panko over the casserole.
Broil until cheese is melted, bubbly, and browned in spots. Serve.
