It is also loaded with potassium and selenium which helps with energy and electrolytes. This meal may look light but it packs a big punch of flavor and fulfilling. With a couple of seasonings and herbs, I created a marinade and grilled the swordfish on my George Foreman Grill.

You will need:

– 3 tablespoons of Extra Virgin Olive Oil

– 1 Teaspoon of Rosemary

– 1 Teaspoon of Parsley

– 2 garlic cloves, minced or use garlic paste

– salt and pepper

optional: 1 Teaspoon of lemon juice

Mix all together and let the swordfish marinate. You can buy swordfish fresh or frozen. Grill about 10 minutes on each side. The fish should become flaky. Pair it with rice or veggies. Oh and if you are so inclined a red wine. A quick Google search told me that they pair well.

The way the flavors of all the seasonings combine is heavenly!

Delectable, Delicious and healthy! I hope you try it soon.

This could be what is for dinner or lunch…or both!
